Ingredients

  • 1 lb ground beef
  • 1 package taco seasoning mix
  • ½ cup water
  • 10 ounce Red Enchilada Sauce
  • 15 ounce pinto beans drained
  • 15 ounce corn drained
  • 6 flour tortillas
  • 1 cup Colby jack cheese shredded
  • scallion for topping
  • cilantro for topping

Instructions

  1. In a large skillet over medium high heat cook beef 7-8 minutes until no longer pink; drain off any remaining grease.
  2. To the beef in the skillet add the taco seasoning, water, enchilada sauce. Corn and beans.
  3. Cook 5 minutes or until sauce thickens slightly.
  4. Meanwhile cut your tortilla into about 1 inch strips.
  5. Stir in tortilla strips until coated with sauce.
  6. Top with cheese.
  7. Serve with scallions and cilantro for topping.
