Beef Chow Fun Noodles

Easy and quick homemade Beef Chow Fun Noodles are delicious, authentic, and taste just like Chinese takeout. You can make and enjoy the best healthy stir fry at home for a fraction of the cost and a lot healthier.

Ingredients

Servings
  • 4-6 oz (125-175 grams) beef tenderloin cut into bite-sized pieces
  • 1 lb (500 grams) flat rice noodle fresh
  • 2 tablespoons neutral cooking oil generic cooking oil
  • 2 cloves garlic minced
  • 1 cup bean sprouts ends trimmed, fresh
  • 1 oz (30 grams) green onion cut into 2 inches lengths, or yellow chives, aka scallion

Marinade

  • 2 teaspoons soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1/2 teaspoon Chinese rice wine or sherry
  • 1 cornstarch heaping teaspoon

Seasonings

  • 2 1/2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon fish sauce
  • 1/2 teaspoon sugar

Instructions

  1. Add the beef slices, soy sauce, dark soy sauce, Chinese rice wine, and cornstarch to a bowl. Marinate for 15 minutes.
  2. Loosen the flat rice noodles completely to prevent them from clumping together.
  3. Add all the seasoning ingredients to a small bowl and mix well. Set aside.
  4. Heat the oil in a wok or skillet over high heat. Add the garlic and stir-fry until light brown and aromatic. Add the beef and stir-fry until it is half-cooked. Then add the bean sprouts, flat rice noodles, and the seasoning mixture.
  5. Toss the flat rice noodles with a spatula or chopsticks until the seasonings are well combined. Continue stir-frying for another 1-2 minutes, until the noodles are slightly charred. Finally, add the green onion or yellow chives and stir-fry for another 10 seconds.
  6. Turn off the heat and transfer the beef chow fun noodles to a serving platter. Serve immediately.

Notes

  • Tips:
  • Marinate the beef for 15 minutes or longer to get all the flavors from the marinade.
  • Loosen the fresh flat rice noodles before cooking them so they won't clump together.
  • Quickly stir-fry the beef chow fun noodles over high heat to have the best result.
