Beef Chow Mein
Description
Beef Chow Mein features thin slices of beef marinated briefly then stir-fried with aromatics including garlic and white scallion parts. The recipe uses light and dark soy sauces, oyster sauce, and sesame oil to create a savory, well-rounded sauce that coats the beef, vegetables, and noodles.
Crisp bell peppers and onions add freshness and sweetness, while bean sprouts contribute a slight crunch. The chow mein noodles are cooked until just tender then cooled to maintain their texture during stir-frying. The beef is browned quickly on high heat to retain juiciness. Black pepper garnish finishes the dish with a subtle pungency.

Ingredients
- 1 cup beef sliced
- 2 Chow Mein noodles blocks
- 1/4 bell pepper sliced (red, green, or mix)
- 1/8 onion sliced
- 1 cup bean sprout
- 4 cloves garlic minced
- 2 scallions minced (white part only)
- 3 tbsp. neutral cooking oil generic cooking oil
- black pepper for garnishing
Marinating beef
- 1/2 tbsp cornstarch
- 1 tsp. neutral cooking oil generic cooking oil
Sauce:
- 2 tbsp soy sauce light
- 1 tsp. dark soy sauce
- 1/2 tbsp oyster sauce
- 1 tsp sesame oil
- 1/4 tsp salt
- black pepper 3 dashes
- 3 tbsp water
Instructions
- Combine all the sauce ingredients in a small bow.
- Marinate beef: scoop 1 tablespoon of the sauce prepared in the previous step and combine well. After mixing well, add starch and combine well. Cover with oil and set aside for 10 minutes.
- Cook noodles: Boil noodle for 2-3 minutes until just cooked. Rinse in cold water so the noodles can be cooled down quickly.
- Stir-fry beef: Add oil to wok over high heat. Cook marinated beef 1 minute until just browned. Remove beef.
- Cook aromatics: Add garlic and scallions. Fry 30 seconds until fragrant.
- Add vegetables: Add peppers and onion. Stir-fry until aromatic.
- Return beef & add noodles: Put beef back in along with noodles, bean sprouts and remaining sauce.
- Toss and serve: Quickly mix everything well. Garnish with grounded black pepper.
