  • 1 onion diced, small
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 Red Enchilada Sauce 10 oz can
  • 1 diced tomatoes with green chilies 10 oz can, drained
  • 1 black beans 15 oz can, drained and rinsed, optional
  • 1 ½ cups cheddar cheese shredded
  • 1 ½ cups Monterey jack cheese shredded
  • 10 flour tortilla cut into halves, or corn tortilla, small
  • ¼ cup cilantro for garnish, chopped, fresh
  • sour cream for serving

Instructions

STEP NO.1: PREHEAT OVEN

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

STEP NO.2: COOK THE BEEF

  1. In a large skillet over medium heat, cook ground beef until browned. Add onion and garlic, cooking until softened. Drain any excess grease.

STEP NO.3: SEASON AND ADD SAUCE

  1. Stir in chili powder, cumin, paprika, salt, and black pepper. Add enchilada sauce, diced tomatoes, and black beans (if using). Simmer for 2-3 minutes.

STEP NO.4: LAYER THE CASSEROLE

  1. Spread a thin layer of the beef mixture at the bottom of the prepared baking dish.
  2. Layer tortilla halves over the beef mixture, followed by more beef and a sprinkle of cheddar and Monterey Jack cheese. Repeat layers until all ingredients are used, finishing with cheese on top.

STEP NO.5: BAKE UNTIL GOLDEN

  1. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.

STEP NO.6: GARNISH AND SERVE

  1. Let the casserole rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with sour cream.

Notes

  • Tortillas: Corn tortillas add authentic flavor, while flour tortillas create a softer texture.
  • Meat Options: Swap beef for ground turkey or shredded chicken.
  • Spicy Kick: Add jalapeños or extra chili powder for heat.
  • Make Ahead: Assemble ahead and refrigerate. Bake when ready!
  • Creamy Beef Enchilada Bake: Mix ½ cup sour cream into the beef mixture for extra creaminess.
  • Green Chile Enchilada Bake: Use green enchilada sauce and add chopped green chilies.
  • Tex-Mex Beef Enchilada Bake: Add a layer of refried beans for a heartier dish.
  • Low-Carb Beef Enchilada Bake: Use low-carb tortillas or layer with zucchini slices.
