Beef Enchilada Casserole

The Beef Enchilada Casserole layers seasoned ground beef, diced onion, taco seasoning, enchilada sauce, shredded cheddar cheese, and flour tortillas in a casserole dish baked until bubbly. This layered casserole captures the flavors of traditional enchiladas in a convenient baked pan format.

Description

This recipe starts with ground beef browned with diced onion and seasoned with taco seasoning. The beef is layered in an 11x9-inch greased casserole dish, starting with enchilada sauce and flour tortillas at the bottom. Multiple layers include beef, enchilada sauce, and cheese, ending with meat, sauce, and cheese on top. The dish is covered with foil and baked at 350°F, then uncovered to brown and meld flavors.

The result is a hearty, cheesy casserole with tender beef filling and moist tortillas infused with enchilada sauce. The melting cheddar adds a sharp contrast to the savory beef and spices. This dish provides a convenient way to enjoy enchilada flavors without individually rolled tortillas.

It is best served warm, paired with simple sides or a fresh salad to balance the richness.

  • ¼ cup taco seasoning
  • 2 cups enchilada sauce
  • 6 inch flour tortillas
  • 12 ounce cheddar cheese shredded

  6. Place two more tortillas on top of the cheese and repeat the beef, enchilada sauce, and cheese. Place the final two tortillas on top and place the remaining beef on top then pour remaining enchilada sauce over it followed by cheese.
  7. Cover with aluminum foil and bake for 30 minutes. Remove the cover and continue to bake for 10 minutes.
