Kebabs:

  • ½ onion small, cut into chunks
  • 3 cloves garlic
  • cup parsley
  • 1 ½ pounds ground beef grass-fed, lean, 90% lean
  • 2 teaspoons cumin ground
  • 2 teaspoon ground coriander
  • ¼ teaspoon allspice or cinnamon, optional
  • 1 ¼ teaspoon salt
  • ½ teaspoon black pepper
  • olive oil for brushing the grill
  • Flat Bread for serving (optional, sliced vegetables like
  • cucumber
  • tomato
  • onion

Tzatziki sauce:

  • 1 cup Greek yogurt plain, reduced fat
  • ½ cup cucumber squeezed dry, grated
  • 1 clove garlic grated or minced
  • 1 teaspoon lemon juice
  • 1 teaspoon mint or ¼ teaspoon dried, or dill, fresh
  • Pinch kosher salt

Instructions

  1. Add the onion, garlic, and parsley to a mini food processor and process until finely chopped. If you don't have a food processor, you can grate the onion on a box grater and finely chop the garlic and parsley with a knife.
  2. Transfer the mixture to a large bowl and add the ground beef, cumin, coriander, allspice (or cinnamon), salt, and pepper. Mix until combined.
  3. Divide the mixture into 8 roughly even balls. Mold each ball around the pointed end of a skewer, making an oval kebab that comes to a point just covering the tip of the skewer. If using wooden skewers, soak them in water for 15 minutes before threading the meat onto them.
  4. Heat a grill pan over medium high heat or prepare a grill. Brush the pan lightly with olive oil. Grill the kebabs, turning occasionally, until brown all over and cooked through, about 10 minutes. Transfer to a serving platter and serve with tzatziki sauce, flat bread and sliced vegetables like cucumber, tomato and onion.
  5. To make the tzatziki sauce, mix all of ingredients together in a bowl. Refrigerate until ready to serve.

Notes

  • Traditional kofta is made with beef, lamb, or a mixture, but this recipe also works well with ground turkey or chicken.
  • You can bake the kofta kebabs in the oven at 400°F for 15-18 minutes if you don't have a grill; use the broiler for 2-3 minutes at the end to brown.
  • Soak wooden skewers in water for 15 minutes before using to prevent burning during grilling.
  • Serve with sliced cucumber, tomato, and onion alongside flatbread, or add other dips like hummus or baba ganoush for variety.
