Beef Lettuce Wraps
Description
This recipe starts by browning seasoned ground beef, then cooking chopped mushrooms and onions until tender. Water chestnuts are added for crunch, along with fragrant garlic and ginger. The sauce mixture imparts a sweet-savory and tangy depth. The completed filling is spooned into separated butter lettuce leaves, providing a fresh, cool contrast to the warm, flavorful beef filling.
The texture combines the tender, juicy filling with crunchy vegetables, creating a balanced mouthfeel. The sauce binds the ingredients and enhances umami without overpowering the individual components. Using lean ground beef helps control grease while maintaining flavor.
The wraps work well as a light main course or appetizer, offering a handheld, interactive eating experience. They suit casual meals and welcome customization with additional herbs or garnishes.
The notes recommend using 90% lean beef to avoid excess grease and suggest where to source hoisin sauce. Adjust seasoning to taste and drain fat if using higher-fat beef varieties.
Ingredients
- 2 teaspoons vegetable oil
- 1 pound ground beef
- 5 ounces shiitake mushrooms stems discarded, caps finely diced
- ½ cup onion finely diced
- 8 ounce can water chestnut drained and finely diced
- 1½ teaspoons garlic minced
- 1 teaspoon ginger minced
- salt to taste
- black pepper to taste
- 5 tablespoons hoisin sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 teaspoons sesame oil
- ⅓ cup green onion sliced
- 1 butter lettuce leaves separated, head
Instructions
- Heat the vegetable oil in a large pan over medium high heat. Add the ground beef and season with salt and pepper to taste.
- Cook the beef for 5-6 minutes, breaking up the meat into smaller pieces with a spatula, until mostly cooked through.
- Add the mushrooms and onion to the pan. Cook for 4-5 minutes or until the vegetables are soft.
- Stir in the water chestnuts, garlic and ginger. Cook for 1 more minute.
- In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar and sesame oil.
- Pour the sauce over the beef mixture and toss to coat evenly.
- Sprinkle the green onions over the beef and vegetables.
- Spoon the beef mixture into the lettuce leaves and serve immediately.
Notes
- Use 90% lean ground beef to balance flavor and minimize excess grease.
- If using higher fat ground beef, drain off excess fat after cooking to avoid greasiness.
- Hoisin sauce adds sweetness and depth; find it in most grocery stores' international aisles.
