Beef Soba Noodle Bowl with Green Beans

This Beef Soba Noodle Bowl brings together tender rump steak slices with soba noodles and green beans, dressed in a savory mix of soy sauce, rice vinegar, mirin, brown sugar, ginger, and garlic. The dish balances rich beef flavor with the lightness of noodles and fresh green beans, complemented by textures from crispy shallots and scallions.

Description

The recipe centers on quickly grilled rump or sirloin steak cooked to medium rare, sliced thin against the grain for tenderness. Soba noodles and green beans are boiled briefly and cooled to stop cooking, maintaining a firm texture. The dressing combines light soy sauce, peanut oil, rice vinegar, mirin, brown sugar, minced ginger, and garlic, lending a complex sweet-savory tang akin to Japanese flavor profiles.

Once assembled, the dish is garnished with finely sliced scallions and crispy Asian shallots, adding both crunch and aroma. This meal is suitable as a light yet protein-rich dish, perfect for lunch or dinner when a balance of textures and flavors is desired.

The recipe suggests substitutions for certain ingredients and notes typical serving quantities, with the inclusion of traditional garnishes available from Asian grocery stores to accentuate the dish authentically.

Ingredients

Servings

Dressing

  • 1 1/2 tbsp soy sauce light or ordinary (Note 1
  • 2 1/2 tbsp peanut oil
  • 3 tbsp rice vinegar Note 2
  • 1 tbsp mirin
  • 2 tsp brown sugar
  • 2 tsp ginger minced
  • 1 clove garlic minced

Steak

  • 200g/7 oz rump steak or sirloin beef steak, excess fat trimmed (Note 4
  • 1 tsp vegetable oil
  • 6oz/180g soba noodles Note 5
  • 6oz/200g green beans trimmed
  • 1 scallion or shallot, finely sliced
  • 1 tbsp shallot crispy, Asian (Note 6

Instructions

  1. Take the steak out of the fridge 30 minutes prior to cooking (or 15 minutes if it's a stinking hot summer day).
  2. Combine dressing ingredients in a jar and shake.
  3. Heat the oil in a skillet over high heat until smoking, then cook the steak to your liking. I like mine medium rare - perfect for absorbing the flavours of the delicious dressing - so I cook this rump steak for 2 minutes on the first side and 1 minute 45 seconds on the second side.
  4. Transfer to a plate and loosely cover with foil. Rest for 5 minutes, then slice into fairly thin slices against the grain (i.e. find the direction of the fibres then cut at a 90 degree angle straight through them).
  5. Meanwhile, bring a pot of water to boil. Cook the soba according to packet instructions (usually 5 minutes). For the last 1 minute of cooking, add the green beans.
  6. Drain the noodles and beans and rinse under cold water to stop them from cooking further and to cool the noodles. Roughly separate beans from noodles.
  7. To serve, divide the noodles between 2 bowls, top with the beans then the steak slices. Drizzle with the dressing (over the steak and noodles), then garnish with shallot slices and Crispy Asian Shallots.

Notes

  • Kikkoman soy sauce or light soy sauce is recommended; avoid dark soy sauce as it is too strong.
  • Rice vinegar can be replaced with white wine vinegar or normal white vinegar with adjusted quantities.
  • Mirin, a sweet Japanese rice wine, can be substituted with honey and white wine vinegar for an alcohol-free option.
  • Any quick grilling beef cut works, with rump and sirloin suggested.
  • Crispy Asian shallots enhance texture and flavor and can be found in major supermarkets or Asian stores.
