Beef Stew
Description
The recipe starts by placing lean beef stew meat with diced Yukon gold potatoes, sliced carrots, and chopped onions in a slow cooker. Seasonings including salt, black pepper, and garlic powder are added along with Worcestershire sauce, beef broth, tomato paste, and a thickening agent such as cornstarch or flour. Cooking on low heat for eight hours or on high for six yields meat that is tender and vegetables that are soft but intact.
The combination of tomato paste and Worcestershire sauce adds depth and a slightly tangy note to the beef broth. The slow cooking method allows flavors to meld and enhances the richness and texture of the stew.
This stew is well suited as a satisfying main dish during cooler months and pairs well with rustic bread or over rice for a filling meal. The recipe emphasizes slow, gentle cooking on low for the best results.
Ingredients
- 2 lbs. beef stew meat (lean beef cut into cubes by butcher)
- 1 1/2 - 2 lbs. potato cut into bite size pieces, Yukon gold variety
- 5-6 large carrot peeled and sliced
- 1 large onion chopped
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder (or 4 garlic cloves finely diced)
- 1 Tablespoon Worcestershire sauce
- 28 ounces beef broth
- 1/4 cup tomato paste
- 2 Tablespoons cornstarch or flour
Instructions
- Place beef stew meat, potatoes, sliced carrots, and chopped onion into a slow cooker. Sprinkle with salt, pepper, garlic powder, and Worcestershire sauce. Pour in beef broth, tomato paste, and cornstarch and stir.
- Heat on low for 8 hours or on high for 6 hours. This beef stew does best cooking low and slow so I suggest cooking it on low for 8 hours.
- Taste for seasoning and add more salt and pepper as needed.
