  • 2 lbs. beef stew meat (lean beef cut into cubes by butcher)
  • 1 1/2 - 2 lbs. potato cut into bite size pieces, Yukon gold variety
  • 5-6 large carrot peeled and sliced
  • 1 large onion chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder (or 4 garlic cloves finely diced)
  • 1 Tablespoon Worcestershire sauce
  • 28 ounces beef broth
  • 1/4 cup tomato paste
  • 2 Tablespoons cornstarch or flour

Instructions

  1. Place beef stew meat, potatoes, sliced carrots, and chopped onion into a slow cooker. Sprinkle with salt, pepper, garlic powder, and Worcestershire sauce. Pour in beef broth, tomato paste, and cornstarch and stir. 
  2. Heat on low for 8 hours or on high for 6 hours. This beef stew does best cooking low and slow so I suggest cooking it on low for 8 hours. 
  3. Taste for seasoning and add more salt and pepper as needed.
