Description
This fondue begins by infusing a saucepan with garlic, then heating beer until steaming to release its flavors gently. A mixture of shredded gouda and sharp cheddar is tossed with cornstarch to stabilize the cheese during melting. Adding the cheese gradually into the warmed beer while stirring creates a smooth, velvety texture. Black pepper adjusts the seasoning for balance.
The fondue is transferred to a warm pot to keep it melted and is served with crusty baguette cubes that provide a sturdy surface for dipping. Optionally, bite-sized vegetables and salami pieces serve as additional dippers, expanding the flavor possibilities for each bite.
This recipe yields enough for four people as a main dish or eight as an appetizer. A low-carb modification is possible by substituting the beer with a zero-calorie hop beverage to accommodate dietary preferences without losing the fondue’s characteristic flavors.
Ingredients
- 1 clove garlic sliced in half lengthwise
- 1 cup beer (see note for keto sub) Reserve remainder for thinning fondue while serving.
- 8 ounces gouda shredded
- 8 ounces sharp cheddar cheese shredded
- 1 tablespoon cornstarch
- black pepper to taste, freshly ground
- 1 baguette cut into 1-inch cubes, ideally with a piece of crust on each
- vegetable optional, bite-sized pieces, for dipping
- salami optional, bite-sized pieces, for dipping
Instructions
- Cut up dippers as needed.
- Rub the bottom of a medium saucepan with sliced garlic. Add the beer, then heat until steam begins to rise from the beer.
- In a small bowl, toss together the two cheeses and the cornstarch. Reduce heat to medium low, then add cheese by handfuls to the beer. Stir continuously until the mixture is melted and smooth. Season with black pepper.
- Transfer the mixture to a fondue pot and serve immediately, accompanied by the bread, and optionally vegetables/sausage for dipping. If mixture begins to thicken too much add some of the reserved beer and stir to incorporate.
Notes
- This recipe serves four as a main dish or eight as an appetizer, making it suitable for small or larger groups.
