Berries and Cream
Description
This recipe starts by gently boiling heavy cream with sugar to meld sweetness and richness. Separately, unflavored gelatin is softened in boiling water and then cooled. Sour cream is combined with vanilla to introduce tang and flavor depth. After all mixtures are cooled to prevent curdling, they are combined and whipped smooth, then chilled overnight to set into a light yet creamy dessert. The final touch is topping with fresh or thawed berries, which add a burst of freshness and a slightly tart contrast to the rich cream base.
The texture is silky and firm enough to hold shape when scooped, while the flavor balances sweetness from sugar and cream with the tangy notes from sour cream and berries. The cooking process avoids scorching by constant stirring and ensures the gelatin sets properly by cooling components before mixing.
Serving chilled, this dessert works well as an elegant conclusion to a meal or a refreshing sweet treat during warm weather. It can be plated in individual bowls or cups with berry garnish and optional chocolate curls for added texture and appearance.
Frozen berries can be thawed and thickened with a small amount of sugar by simmering to enhance flavor and consistency before adding as a topping.
Ingredients
- 3 cups heavy whipping cream
- 1 ½ cups sugar
- 1 envelope gelatin unflavored
- 1 cup water boiling
- 1 tablespoon vanilla
- 1 ½ cups sour cream I used reduced fat with great results
- Berry fresh or frozen
Instructions
- Simmer the 3 cups cream and 1 1/2 cups sugar, stirring constantly to avoid scorching, until it comes to a boil. Set aside and cool completely.
- Dissolve unflavored gelatin in the 1 cup boiling water and set aside to cool completely.
- In a small bowl, whisk together the sour cream and vanilla until smooth.
- Gradually add all of the ingredients together (making sure that the cream mixture and gelatin mixture are completely cooled). Stir with a wire whip until totally smooth.
- Press a piece of plastic wrap directly on surface of cream and chill overnight. (My Aunt Marilyn makes this in the morning before church, scoops the cream mixture into individual dessert bowls before chilling and the cream is set and ready to eat by 5:00 p.m.)
- Top with fresh or frozen berries* and shaved chocolate curls. I used Pioneer Woman’s tip on chocolate curls and couldn’t believe how gourmet I felt when they turned out.
Notes
- Frozen berries can be thawed overnight, then simmered with sugar until thickened for a more intense berry topping.
