Ingredients
For Berry Layer
- 4 cups berries frozen
- 2 tablespoons lemon juice
- 2 teaspoons lemon zest
- 2 tablespoons cornstarch
- 1/4 cup sugar
For Crisp Layer
- 1/2 cup butter melted and cooled
- 1 egg
- 1 cup old fashioned oats
- 2 cups all purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- pinch of salt
- 1 teaspoon baking powder
- 1 teaspoon pure vanilla extract

Instructions
- Preheat oven to 375 F
- In a bowl, mix the berries with the cornstarch, sugar, lemon juice and zest. Set aside
- In another bowl, mix the flour, oats, sugars, baking powder and salt. Add the egg beaters and the melted Smart Balance Spread.
- Using individual ramekins or a baking dish. Crumble half of the dough in the bottom. Add the berries and top with the rest of the crumble
- Bake for 25-30 minutes for individual ramekins or for 45 minutes for the large baking dish
- Serve warm from the oven
