Berry Filling:

  • 1 cup raspberry
  • 1 cup blueberries
  • 1 cup strawberries (cut into quarters)
  • 1 cup blackberry
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 Tablespoon cornstarch

Berry Crumble Topping:

  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 cup flour
  • 8 Tablespoons butter (cut into cubes)
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat oven to 350 degrees. Place berries, sugar, cornstarch, and vanilla in a bowl. Toss to coat.
  2. In a small bowl, mix the flour, brown sugar, and sugar. Cut in 8 Tablespoons (1 cube) of cold butter, cut into cubes, with a fork or pastry cutter until it is combined. You may end up with chunks of butter and that is okay as the butter will melt in the oven
  3. Place the berry mixture in a 9-inch baking dish. Top with crumble. Bake for 26-32 minutes or until the berry crisp is a light golden color and the berry juices starts to bubble.
  4. Let cool for at least 10-15 minutes before serving to allow it to set up. Serve with vanilla bean ice cream.

Notes

  • Use fresh berries for optimal flavor and texture in the filling.
  • Allow the crisp to cool 10-15 minutes after baking for the filling to set properly.
