Berry Lemon Whipped Yogurt Parfaits

Berry Lemon Whipped Yogurt Parfaits layer fresh raspberries and blackberries marinated in lemon juice and honey with a light, creamy lemon whipped yogurt made from Greek yogurt, heavy cream, lemon zest and juice, sugar, and vanilla. This creates a refreshing dessert or snack with bright citrus flavor and creamy texture punctuated by sweet berries and optional mint garnish.

Description

The recipe begins by heating lemon juice and honey to blend and dissolve the sweetener, then steeping fresh mint leaves in the mixture to infuse flavor while cooling. Meanwhile, a lemon whipped yogurt is prepared by whipping Greek yogurt with heavy cream, lemon zest and juice, sugar, and vanilla until smooth and creamy.

Fresh raspberries and blackberries are divided amongst serving glasses or bowls and topped with the lemon-infused whipped yogurt. The marinated berries add a subtle sweet-tart bite, balanced by the rich and tangy whipped yogurt. Mint leaves can be added for herbaceous brightness and garnish.

These parfaits serve well as a light dessert or a fresh breakfast item. The contrast between creamy and fruity textures enhances the experience. The method requires minimal cooking and emphasizes fresh ingredients and bright citrus flavor.
