Berry Rainbow Fruit Skewers

These Berry Fruit Skewers are a healthy sweet treat everyone will love! Colors of the rainbow sing in these fruit kabobs, with the option to drizzle with chocolate or serve with yogurt dip. Gluten free, vegan friendly recipe.

Ingredients

  • 16 ounces strawberries hulled and sliced
  • 1 medium pineapple cut into small triangles
  • 3 medium-large kiwi skin removed and sliced
  • 6 ounces blackberry
  • 1 pint blueberries
  • wooden skewers

Optional for Dipping:

  • 2 tablespoons mini chocolate chips
  • ½ teaspoon coconut oil
  • cup Greek yogurt plain, of choice
  • 1 tablespoon honey raw

Instructions

  1. To make berry fruit skewers: Gather all of the fruit (washed and dried), cutting board, skewers, and baking sheet or dish to place finished skewers.
  2. Prep fruit: Slice the strawberries, pineapple and kiwi into about 1 “ thickness (you want to make sure it doesn’t fall off skewer once poked through).
  3. Assemble skewers: Start to slide berries and fruit onto skewers, alternating the berry varieties with the pineapple and kiwi. Continue this process until you’ve made the desired amount of skewers. Set aside while you make the yogurt dipping sauce and melted chocolate (if using).
  4. To melt chocolate: Add chocolate chips and coconut oil to microwave safe bowl and microwave on half power in 30 second intervals, stirring in between until melted. You can drizzle the chocolate over the skewers and place in the fridge to chill, or serve along side for dipping.
  5. To make yogurt dip: Combine your favorite yogurt with honey and keep chilled until serving.

Notes

  • MAKE AHEAD - fruit skewers can be assembled 1 day in advance if drizzling with the melted chocolate.
  • STORAGE - store skewers in an airtight container or on a plate tented with plastic wrap in the fridge for up to 4 days. Parchment paper or paper towel helps to absorb any excess moisture.
  • Nutrition info is per skewer with toppings.
