Ingredients

  • 5 oz (150 g) cherry tomato
  • 5 oz (150 g) mozzarella cheese small balls
  • 5-6 basil fresh leaves
  • 5 oz (140 g) pasta small; bowtie, penne, macaroni, rigatoni, rotini varieties
  • 2 tbsp pesto click here for homemade version
  • 2 tsp olive oil for drizzling
  • 1 tsp sea salt coarse; for serving
  • black pepper
  • balsamic glaze optional

Instructions

  1. Slice the tomatoes in half, set aside
  2. Chop the basil and set aside.
  3. Drain the mozzarella balls.
  4. Boil the pasta, drain and place back into the pot.
  5. Add the pesto to the pasta and mix well so that all the pasta is coated with the pesto.
  6. Place pasta in a large bowl, add the tomatoes, mozzarella, basil and toss gently.
  7. Finish the dish with a drizzle of olive oil, a pinch of coarse seas salt and freshly ground black pepper.
  8. Optional: Add a drizzle of balsamic glaze.

Notes

  • Make Ahead
  • Pasta salad is very easy to make generally. For this recipe you can do the following:
  • When you are ready to make it, just slice the tomatoes in half and chop the basil and assemble the salad.
  • Storage
  • This salad can be stored covered in the refrigerator for up to 3 days.
  • Boil the past 1 day ahead
  • Prepare the pesto (if not using store bought) one day ahead.
  • Wash tomatoes one day ahead.
