Description
The recipe starts by combining clotted cream, sugar, whole milk, and egg yolks in a pot to form a custard mixture. The mixture is heated gently to a simmer, maintaining a temperature around 170°F (77°C), to thicken without curdling. After cooking, the custard is allowed to cool slightly.
The cooled custard is then slowly mixed into heavy whipping cream through a sieve to catch any lumps, combining the ingredients into a smooth base. This mixture is poured into the bowl of a pre-frozen ice cream maker and churned according to the manufacturer's instructions, generally about 20 minutes, to create a soft-serve ice cream texture.
Once churned, the ice cream is transferred to a loaf pan lined with wax paper, covered, and frozen for at least 2 hours to firm up before serving. The end product is a luscious, full-bodied ice cream with the rich notes from clotted cream, balanced by the sweetness and smooth texture of a traditional custard ice cream.

- 6 oz white sugar

Instructions
- Add clotted cream, sugar, milk and egg yolks to a pot. These ingredients will form a custard once cooked.
- Mix well and bring gently to a boil. Simmer for 2-3 minutes. When the mixture reaches 170 degrees F. / 77 degrees C., remove it from the heat. Allow the custard to cool for a few minutes.
- Pour the cream into a bowl.
- Slowly add the custard to the bowl of cream. Use a sieve to catch any lumps.
- Mix the egg custard with the cream and add to the pre frozen bowl of the ice cream machine.
- Put the bowl onto the ice cream machine and attach the lid.
- Follow the manufacturer's instructions and churn the ice cream until soft, about 20 minutes.
- Pour the ice cream into a glass or metal (lined with wax paper) loaf pan and spread evenly. Wrap with plastic wrap and freeze for at least 2 hours.
