Best Cowboy Cookies
Description
This cookie recipe starts with creaming softened butter and sugars until light and fluffy, incorporating eggs and vanilla for moisture and flavor. Dry ingredients including flour, oats, baking soda, cornstarch, and salt are added, followed by shredded coconut, semi-sweet chocolate chips, and chopped pecans, offering a varied texture profile.
Cookies are shaped into balls, baked at 365°F until their edges are lightly golden but the centers remain soft. Adding reserved chocolate chips immediately after baking enhances their visual appeal and adds an extra chocolate touch. Cooling on the baking sheet allows residual heat to finish baking without over-drying.
These cookies store well frozen and maintain their flavor and texture when thawed, making them suitable for making ahead or gift giving. Their rich mix of oats, nuts, and coconut sets them apart from simpler chocolate chip cookies, providing satisfying chew and flavor depth in each bite.
Ingredients
- 1 cup butter (barely softened)
- 1 cup brown sugar
- 1 cup sugar
- 2 large egg
- 2 teaspoons vanilla extract
- 2 1/4 cups flour
- 1 3/4 cup rolled oats
- 1 teaspoon baking soda
- 1/2 teaspoon cornstarch
- 1/2 teaspoon salt
- 1 1/2 cups sweetened flaked coconut
- 2 cups chocolate chips semi-sweet
- 1 cup pecans (roughly chopped)
Instructions
- Preheat oven to 365 degrees. In a large mixing bowl, cream together butter, brown sugar, and sugar for about 3-4 minutes, or until light and fluffy. Scrape the sides of the bowl halfway through to ensure even mixing.
- Add eggs and vanilla and mix for 1 minute longer.
- Stir in flour, rolled oats, baking soda, cornstarch, and salt. After the dry ingredients are mixed together, add coconut, chocolate chips (save 1/4 cup for placing on top after removing from the oven), and pecans.
- Drop or rolled into balls and place on a light-colored baking sheet. Bake for 9-11 minutes or until the edges start to turn a light golden color. Don't overbake. The cookies will continue to bake once you remove them from the oven. As soon as you remove them from the oven, carefully press the remaining chocolate chips on the cookies to make them look more gourmet.
- Let cool on baking sheet for at least 5 minutes.
Notes
- You can freeze these cowboy cookies in a freezer-safe bag for several months without losing quality.
