This Instant Pot Lobster Tail recipe prepares lobster tails quickly using steam pressure cooking to maintain tenderness and flavor. The lobster meat is butterflied by cutting the shell and pulling it back so the meat sits atop the shell, then seasoned with a mix of butter, sea salt, garlic powder, smoked paprika, and white pepper. The gentle steaming infuses the lobster with the spice and butter flavors, producing juicy, flavorful tails.

Description

The lobster tails are prepared by carefully cutting the shells along the top and pulling the shell down to expose the meat. After deveining and cleaning, lemon wedges may be slid under the meat for a fresh citrus element during cooking. A spice blend including garlic powder, smoked paprika, white pepper, and sea salt is sprinkled over the lobster, and small pats of butter are added for richness.

Placed shell side down on the Instant Pot trivet above water or fish stock, the lobster tails are cooked under pressure for one minute, which with the time for the pot to reach pressure effectively steams the shells and meat. Ingredients

Servings
  • 2 lobster tails
  • 1 ½ tbsp butter divided
  • ¼ tsp salt sea salt
  • 1 tsp garlic powder or 2 tsp fresh minced garlic
  • 1 tsp smoked paprika
  • ½ tsp white pepper
  • 1 cup water or fish stock

Instructions

  1. Add trivet and water or stock to Instant Pot.
  2. Set lobster tails on a baking sheet or in an oven safe dish.
  3. With sharp kitchen scissors or a knife, carefully cut the top of the lobster tail shell down to the tip of the tail,. Don't worry about hitting the meat too much as it will create a "butterflied" appearance.
  4. Devein and remove any grit if needed.
  5. Carefully pull shell down, so meat looks like it is sitting on top of shell and open.
  6. To make it look even better, slide a lemon wedge or two under the lobster meat in between the meat and the tail.
  7. Mix spices in a small bowl.
  8. Sprinkle with spices.
  9. Add small pats of butter along the lobster tail.
  10. Place over trivet, shells facing down.
  11. If making 8 lobster tails, place additional 4 in steamer basket and place above trivet.
  12. Close lid and set to seal.
  13. Set Instant Pot cook time at 1 minute. This will actually take closer to 15 minutes as the instant pot heats up and comes to pressure.
  14. When one minute at pressure is up, force release the pressure.
  15. Always release away from your face and never stand over your instant pot.
  16. Remove lid from pot, but leave lobster tails in the pot for 10 minutes to carry over cook, and vent additional steam.
  17. Serve with plenty of melted butter to dip in!
