Best Easy Keto Mashed Cauliflower

Ingredients

  • 1 cauliflower cut into florets, large head
  • 4 tablespoons butter unsalted
  • 1 tsp garlic powder
  • 1 tsp italian herbs
  • 6 cloves garlic diced
  • 3 tablespoons heavy cream
  • ¼ cup Parmesan Cheese
  • salt to taste
  • black pepper to taste
  • chives for garnish, chopped

Instructions

  1. Bring a large pot of water to boil on the stove, add cauliflower.
  2. Steam for 15 minutes until cauliflower is soft to the touch.
  3. Drain cauliflower and cover with a lid while butter is prepared.
  4. In the same pot, heat the butter over medium high heat. Sauté garlic until softened and fragrant (about 2 minutes).
  5. In a stand mixer, or with a large bowl with a hand mixer, add cauliflower, heavy cream, seasonings, melted butter and garlic.
  6. Mix on high until smooth.
  7. Top with diced chives and serve immediately!
