Best Ever Chocolate Cake
Description
Best Ever Chocolate Cake uses cocoa powder and a combination of baking powder and baking soda to achieve a light yet rich chocolate cake. Eggs, milk, oil, and vanilla flavor the batter and contribute to its moist texture. The boiling water is mixed in last, thinning the batter and enhancing the cake's softness once baked. This cake can be baked in various pan sizes or as cupcakes, adjusting baking times accordingly. Cooling the cake on wire racks after baking helps preserve its texture and finish.
This chocolate cake serves as a versatile dessert base, suitable for frosting or enjoying plain. It's appropriate for birthdays, casual gatherings, or any time a chocolate cake is desired. The recipe’s neutral sweetness makes it a good match for buttercream or cream cheese frostings.
The notes recommend pan size and baking times for different forms—use a 9x13 pan for a single cake or 8-inch round pans for layers, and line cupcake pans with paper cups. Baking times vary from 22 minutes for cupcakes to around 40 for larger cakes, and a toothpick test ensures doneness.
Ingredients
- 2 cups granulated sugar
- 1 ¾ cups all-purpose flour
- ¾ cup cocoa powder unsweetened
- 1 ½ teaspoons baking powder
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 egg
- 1 cup milk
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup water boiling
Instructions
- Preheat oven to 350°F.

Notes
- The 9x13-inch pan requires 35 to 40 minutes baking time.
- For three 8-inch round cake layers, bake 30 to 35 minutes each.
- To make cupcakes, fill paper liners two-thirds full and bake 22 to 25 minutes.
