BEST EVER Instant Pot Mexican Rice
Description
This recipe for BEST EVER Instant Pot Mexican Rice starts by sautéing long grain rice in vegetable oil until some grains turn golden brown, introducing a toasted depth to the final dish. Minced garlic is added briefly for aromatic flavor before combining tomato sauce, salt, black pepper, and water for the pressure cooking step.
Using manual low pressure for 12 minutes in the Instant Pot, followed by a natural release and quick release, delivers fluffy rice that absorbs the tomato sauce and spices without becoming mushy. Fluffing with a fork finishes the texture.
The rice's mild tomato and garlic flavors make it a versatile accompaniment for tacos, grilled meats, or beans. It also can be customized by substituting salsa for tomato sauce for a more robust flavor.
The method allows for hands-off cooking that saves time compared to stovetop simmering while ensuring consistent results with fluffy, separate grains.
