Best-Ever Rice Krispie Treats

These Rice Krispie Treats combine melted butter and a large amount of miniature marshmallows to coat crispy rice cereal, resulting in a sticky, sweet bar that sets firm yet soft enough to bite. The recipe folds additional marshmallows into the mixture before pressing into a greased pan, creating a textured, gooey treat that can be portioned into squares. The option to substitute marshmallow fluff or add mix-ins offers versatility. They keep fresh at room temperature for up to three days and can be frozen individually.

Description

The Best-Ever Rice Krispie Treats recipe starts by melting butter and the majority of the miniature marshmallows over low heat until fully combined, creating a smooth, sticky base. Salt and vanilla add subtle seasoning. Rice Krispies cereal is then stirred in and coated thoroughly before folding in more marshmallows to add texture.

The mixture is pressed firmly into a foil-lined, greased baking pan to create an even layer that cools and firms at room temperature. Once set, it can be sliced into squares. The treats have a chewy, airy texture from the puffed cereal and marshmallow, with buttery richness.

These treats work well as a casual snack or dessert, especially enjoyed by children. The recipe notes the option to omit the extra marshmallows stirred in at the end without major changes and that marshmallow fluff can replace the miniature marshmallows when melted with butter.

For best freshness, the treats can be stored in an airtight container at room temperature for three days or individually wrapped and frozen for up to two months. Thawing is recommended before serving.

Ingredients

Servings
  • 10 tablespoons butter unsalted
  • 20 cups miniature marshmallows divided
  • 1 teaspoon kosher salt
  • ½ teaspoon vanilla extract
  • 12 cups Rice Krispies cereal

Instructions

  1. Line a 9x13-inch baking dish with foil, then coat with non-stick cooking spray; set aside.
  2. In a large saucepan or stockpot, melt the butter and 16 cups (680 grams) of the miniature marshmallows over low heat until the marshmallows are just melted. Stir in the salt and vanilla to combine. Remove the pan from the heat, add the Rice Krispies and mix until it is completely and evenly coated with the marshmallow mixture. Stir in the additional 4 cups of miniature marshmallows.
  3. Turn the mixture out into the prepared pan and, using a wooden spoon or spatula that has been coated in non-stick cooking spray, press the mixture firmly into a packed, even layer. Allow to set at room temperature for at least 30 minutes. Using the foil, remove the treats from the pan and slice into squares. Leftover rice krispie treats should be stored in an airtight container at room temperature for up to 3 days.

Notes

  • Using three (10-ounce) bags of miniature marshmallows ensures the correct marshmallow-to-cereal ratio for texture.
  • You may omit the extra marshmallows folded in at the end without altering the recipe's success.
  • Marshmallow fluff can replace miniature marshmallows if melted with butter over low heat.
  • Store treats in an airtight container at room temperature for up to three days for best quality.
  • For longer storage, wrap treats individually and freeze for up to two months; thaw at room temperature before eating.
