Ingredients
- 3 pounds boneless beef chuck, cut into 1-inch cubes
- salt and pepper
- 5 medium sliced carrots
- 1 pound baby potatoes
- 1 small diced white onion
- 3 cloves minced garlic
- 3 cups beef broth
- ½ cup tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Italian seasoning
- salt and pepper to taste
- ¼ cup all-purpose flour
- 2 cups frozen peas
- Fresh chopped parsley for garnish

Instructions
- Season 3 pounds boneless beef chuck, cut into 1-inch cubes with salt and pepper . Heat a large skillet over medium-high heat. Add the seasoned beef cubes and brown on all sides for 2-3 minutes. Transfer the beef to the slow cooker.
- Add 5 medium sliced carrots, 1 pound baby potatoes, 1 small diced white onion, and 3 cloves minced garlic.
- Add 3 cups beef broth, ½ cup tomato paste, 1 tablespoon Worcestershire sauce, 1 tablespoon Italian seasoning, and salt and pepper to taste.
- Cook on LOW for 8-10 hours and HIGH for 6-8 until the beef and veggies are tender.
- An hour before serving, take out 1 cup of the beef stew liquid and whisk it with ¼ cup all-purpose flour. Stir the flour mixture into the stew along with the 2 cups frozen peas
- Allow the stew to heat and thicken then serve with fresh chopped parsley for garnish on top.
