Best Flank Steak Tacos
Description
The recipe starts by mixing neutral cooking oil with lemon, lime, and orange juices plus garlic, chili powder, and salt to make a citrusy marinade. Flank steak is sealed in this marinade and refrigerated for at least 30 minutes to soak up the flavors. Grilling the steak over medium-high heat for about eight minutes per side achieves a slightly pink center and juicy texture. Resting the steak before slicing thinly across the grain ensures tenderness. The sliced steak is served in small flour tortillas and garnished with ingredients such as chopped cilantro, avocado slices, diced onion, and lime wedges to add fresh, bright flavors and richness.
These tacos work well as a main meal or party snack, offering a combination of seasoned grilled meat and creamy, fresh toppings. The citrus marinade enhances the flavor and helps keep the steak tender during cooking. The recipe is straightforward enough for a weeknight dinner but also has enough character for outdoor grilling occasions or gatherings.
Ingredients
- 1 ½ pounds flank steak
- ⅓ cup neutral cooking oil generic cooking oil
- lemon juice of 1
- lime juice juice of 2 limes
- orange juice juice of 1 orange
- 1 teaspoon garlic minced
- 1 teaspoon chili powder
- 1 teaspoon salt
- 8 flour tortillas 6-inch
- Coriander for serving, chopped cilantro, lime wedges
- avocado
- onion
- lime
Instructions
- Whisk together oil, lemon juice, lime juice, orange juice, garlic, chili powder, and salt. Pour into a large ziploc bag.
- Add steak to the bag, press out all of the excess air, and seal the bag.
- Swish the bag around a bit to get all of the steak good and covered. Then leave the steak alone to marinate in the fridge at least 30 minutes. (You can also prepare this the night before and leave it soaking till you’re ready to grill the next day.)
- Use tongs to transfer steak to a medium-hot preheated grill or grill pan, discard excess marinade.
- Grill for about 8 minutes on each side or until cooked to desired doneness. (I like mine just a little pink in the middle for best flavor and ultra juicy/tender steak). When it's done, remove from grill and allow to rest for 10 minutes, then slice it into thin strips.
- Assemble tacos with steak in the tortillas, topped with your favorite garnishes like avocado, onions, cilantro, salsa, and fresh squeezed lime juice.
Notes
- Marinate the steak for at least 30 minutes or up to overnight for deeper flavor and tenderness.
- Grill steak to medium-rare for best juiciness and flavor; let it rest before slicing thinly.
- Serve with traditional toppings such as chopped cilantro, avocado, diced onion, and lime wedges to complement the steak.
- Use 6-inch flour tortillas for authentic taco size and easy eating.
