Best Healthy Coffee Cake

The Best Healthy Coffee Cake combines almond flour and natural sweeteners like maple syrup and coconut sugar to create a moist, tender cake with a cinnamon swirl and crumb topping. The cake's texture is slightly denser than traditional versions but rises well, thanks to baking soda and powder. Its cinnamon swirl provides a warm, spiced layer that complements the crumbly topping, offering a balanced sweetness and a satisfying contrast of textures perfect for breakfast or a snack.

Description

The Best Healthy Coffee Cake uses almond flour as its base, giving it a tender, slightly dense crumb that holds moisture well. The batter blends eggs, applesauce, maple syrup, coconut sugar, and melted coconut oil for natural sweetness and moisture. A cinnamon swirl layer is sandwiched between two batter layers, adding warmth and spice, while the crumb topping provides a crunchy texture with almond flour, cinnamon, and coconut sugar.

During baking, the cake rises to fill the prepared pan despite the initially small amount of batter. The final cake offers a mildly sweet and cinnamon-infused profile with a mix of soft and crunchy textures. It makes a wholesome addition to a morning meal or afternoon tea.

Enjoy this coffee cake within a few days, stored airtight at room temperature or refrigerated to maintain freshness. Thoroughly whisking the dry almond flour mixture helps prevent clumping, ensuring a smooth batter and consistent texture.

Ingredients

Servings

Coffee Cake:

  • 3 large egg
  • ¼ cup applesauce unsweetened
  • ¼ cup pure maple syrup
  • ¼ cup coconut sugar
  • ¼ cup coconut oil melted
  • 1 ½ teaspoon vanilla extract
  • 2 ¼ cups almond flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder

Cinnamon Swirl Layer:

  • ¼ cup coconut sugar
  • 1 ½ teaspoon cinnamon
  • 1 tablespoon coconut oil melted

Crumb Topping:

  • cup almond flour
  • cup coconut sugar
  • 3 - 4 tablespoon coconut oil melted
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F and grease an 8×8-inch or 8-inch round baking tin. Line it with parchment paper.
  2. In a large mixing bowl, whisk the eggs. Add the applesauce, maple syrup, coconut sugar, vanilla extract, and melted coconut oil. Mix well.
  3. In another large mixing bowl, whisk together the almond flour, baking powder, cinnamon, and baking soda, ensuring there are no clumps.
  4. Combine the wet ingredients with the dry ingredients, whisking gently until a batter is formed.
  5. Pour half of the batter into the prepared baking tin. It will look like too little, don't worry, the coffee cake rises!
  6. In a small bowl, mix together the ingredients for the cinnamon swirl layer until it forms a sandy mixture. Sprinkle it evenly over the batter in the pan.
  7. Top with the remaining coffee cake batter. Again, the batter may look like there is too little, but don't worry because the coffee cake rises!
  8. In a separate bowl, combine the ingredients for the crumb topping, mixing until it resembles a sandy texture. Sprinkle it evenly over the batter.
  9. Bake for 40-50 minutes, or until a toothpick inserted into the cake comes out clean. Allow the coffee cake to cool completely before serving. Enjoy!

Notes

  • Make sure to whisk the dry almond flour mixture well to remove clumps for a better texture.
  • The batter may seem thin or small but the cake rises nicely during baking.
  • Store leftovers in an airtight container at room temperature or in the fridge for 2 to 4 days to keep it moist.
  • Freezing is not recommended as it may affect the texture.
