Best Homemade Cinnamon Rolls Ever

This recipe guides you through making cinnamon rolls from basic ingredients including milk, yeast, flour, butter, and eggs. The dough rises to a soft, tacky consistency before being rolled into a rectangle and spread with a cinnamon and brown sugar filling. After shaping and cutting, the rolls are baked until lightly browned and topped with a cream cheese glaze made from cream cheese, butter, powdered sugar, and vanilla. These cinnamon rolls offer a tender, sweet, and warmly spiced experience suitable for breakfast or brunch.

Description

Best Homemade Cinnamon Rolls Ever combines a yeast-risen dough with a classic cinnamon sugar filling and a creamy glaze. The dough is mixed with warm milk and yeast then allowed to rise until doubled, ensuring a soft and fluffy texture. The filling of melted butter, brown sugar, and ground cinnamon creates a sweet and aromatic spiral when rolled up. Baking them just until they develop a slight golden kiss on top preserves their tenderness. Once cooled slightly, a cream cheese glaze with vanilla and powdered sugar is spread over the rolls, adding a rich, smooth finish.

The cinnamon rolls provide a comforting, sweet treat with noticeable cinnamon flavor balanced by the smooth glaze. They can be enjoyed fresh from the oven for breakfast or as a snack. The dough's tacky softness aids in rolling and shaping, delivering tender layers after baking.

For convenience, the rolls can be made ahead of time by refrigerating them after cutting and shaped, then brought to room temperature before baking. Individually freezing the shaped rolls is also possible for longer storage, requiring thawing before baking. Baking time varies with roll size and should be until lightly browned.

Ingredients

Servings

Dough

  • 1 cup milk 100-110℉, warm
  • 1 tablespoon instant dry yeast
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 3 tablespoons butter softened, salted
  • 1 large egg
  • 3 cups all-purpose flour

Filling

  • 1/2 cup butter melted, salted
  • 1 cup brown sugar
  • 2 tablespoons ground cinnamon

Glaze

  • 4 ounces cream cheese softened
  • 1/4 cup butter softened, salted
  • 1 to 1 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 to 2 tablespoons milk

Instructions

  1. In the bowl of a stand mixer, combine 1 cup warm milk, 1 tablespoon instant dry yeast, 2 tablespoons granulated sugar, 1 teaspoon salt, 3 tablespoons salted butter, and 1 large egg. Add in 3 cups all-purpose flour. Using a dough hook, turn the on to a low speed.
  2. Once the flour starts to incorporate into the dough, increase the speed to a medium range. Add more flour as necessary so that the dough pulls away from the sides of the bowl. The dough mixture should be tacky, but not stick to your hands. It should be soft. Add more or less flour until the dough reaches the desired consistency. The amount of flour you add in bread making is always an approximation and you should go by feel.
  3. Transfer the dough to a lightly greased mixing bowl. Cover with a towel and let rise until double in size, about 1 hour.
  4. Lightly grease a baking sheet or 9x13 pan. Punch down the dough and roll into a 12inch by 18inch rectangle.
  5. Brush the dough with 1/2 cup salted butter. In a small bowl, stir together 1 cup brown sugar and 2 tablespoons ground cinnamon. Sprinkle on top of the melted butter. Roll up tightly lengthwise so you have one long roll. Use a sharp knife to gently cut the dough into 12 one-inch slices.
  6. Place the slices onto a lightly 9x13 pan. Cover and let rise 30 to 45 minutes.
  7. Preheat oven to 325 degrees. Bake the rolls for about 14 minutes, until just kissed with brown on top.
  8. While the cinnamon rolls are baking, make the cream cheese glaze by using a hand mixer to whip together 4 ounces cream cheese and 1/4 cup salted butter in a bowl until light and fluffy. Whip in 1 to 1 1/2 cups powdered sugar and 1/2 teaspoon vanilla extract. Add enough milk to achieve a drizzle-like consistency.
  9. Frost the rolls while still warm. Serve immediately or cool and store. These should stay good for 4 to 5 days.

Notes

  • Bake the cinnamon rolls until they have a light golden top to ensure they are fully cooked without drying out.
  • For overnight preparation, refrigerate shaped rolls covered with plastic wrap and bake after bringing them to room temperature.
  • To freeze, arrange rolls spaced apart on a sheet, freeze until solid, then store in a sealed bag; thaw before baking.
