Description

This Italian Hot Chocolate recipe starts by blending cocoa powder, cornstarch, and sugar to form a smooth base. Warm milk is gradually added while whisking to avoid lumps. Heating over medium-low heat thickens the mixture through the cornstarch’s gelatinization, giving the drink a custard-like consistency. Once near boiling, rich dark chocolate is folded in to melt and enrich the drink further.

The final texture is luxuriously thick and creamy, distinguishing it from thinner hot cocoa versions. Optional whipped cream adds a light contrast to the dense chocolate.

This hot chocolate can be stored in the refrigerator up to three days when cooled and sealed. To maintain smoothness, reheat gently on low heat or in the microwave stirring often. For longer storage, freezing in ice cube trays allows convenient portioned thawing.

Ingredients

  • 5 teaspoon cocoa powder 20 g, high-quality organic
  • 4 teaspoon cornstarch (20 g)
  • 4 teaspoon sugar (25 g)
  • 500 ml milk 17.5 fl oz, warmed
  • 120 g dark chocolate 4 oz, 70%, finely chopped

To serve:

  • 2 tablespoon Whipped Cream optional, fresh

Instructions

  1. Whisk the cornstarch, cocoa and sugar in a small saucepan.
  2. Pour the warm milk into the saucepan.
  3. Heat the mixture over medium-low heat, whisking often to avoid lumps.
  4. Bring the hot chocolate mixture almost to a light boil, then reduce the heat to low and fold in the chopped dark chocolate. 
  5. Whisk the hot chocolate until thick and creamy, adding more sugar if you like it sweeter.
  6. Divide the Italian hot chocolate among two cups, top with whipped cream and serve. 

Notes

  • Store cooled Italian hot chocolate in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on low heat on the stove or microwave, stirring frequently to restore creaminess.
  • Freeze leftover hot chocolate in ice cube trays for convenient portions; warm cubes with milk for a quick serving.
