Best Protein Mug Cake

The Best Protein Mug Cake is a quick, single-serving cake combining oat flour with vanilla protein powder, coconut sugar, and baking powder for lift. Milk and vanilla extract provide moisture and flavor, while chocolate chips add bursts of sweetness. Cooked briefly in the microwave, it yields a moist, tender cake ideal for a fast snack or dessert portion.

Description

This mug cake uses oat flour mixed with vanilla whey or pea protein powder, coconut sugar, and baking powder to create a batter with moderate rise and a soft crumb. Milk—either oat, almond, or dairy—is added with vanilla extract to provide a smooth texture and subtle aroma.

Chocolate chips can be stirred in for added texture and sweetness, contributing melty pockets throughout the cake. The batter is microwaved for about a minute to achieve a warm, light cake ready to enjoy immediately. Because microwave power varies, cooking times may need adjustment to avoid undercooked or rubbery spots.

This mug cake serves as a convenient, portion-controlled treat rich in protein and easy to customize with preferred milk alternatives or flavor add-ins. Serving right after cooking ensures best texture and warmth.

Ingredients

Servings
  • ¼ cup oat flour spooned & leveled (I love Bob’s Red Mill)
  • 2 tablespoon protein powder whey or pea protein, vanilla
  • ½ teaspoon baking powder
  • 1 tablespoon coconut sugar
  • ¼ cup milk oat, almond, or cow’s milk
  • ½ teaspoon vanilla extract
  • 2 tablespoon mini chocolate chips or regular sized (optional)

Instructions

  1. In a microwave-safe ramekin or mug, mix the oat flour, protein powder, coconut sugar, and baking powder.
  2. Add in the milk and vanilla. Whisk until there are no clumps, and a smooth batter is formed.
  3. Stir in chocolate chips if desired and sprinkle extra on top.
  4. Microwave on high for 60 - 75 seconds. Every microwave is different, so I always check mine at the 50-second mark. If they look underdone or a little liquidy, cook in 10-second intervals until done.
  5. Serve immediately; enjoy!
