  • lemon zest of 2 lemons
  • 8 oz butter at room temperature
  • 1 egg
  • 2 1/4 cups flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt

For the Lemon Cream Cheese Icing

  • 4 oz butter at room temperature
  • 1 oz cream cheese
  • 2 cups powdered sugar
  • 4 tsp lemon juice

Instructions

  1. Pre-heat the oven to 320F and line 2 extra large baking sheets with parchment.
  2. Mix together the sugar and lemon zest, rubbing the zest into the sugar with your fingertips to release the lemon oils.
  3. Beat the butter into the lemon sugar until light and fluffy. Beat in the egg.
  4. Slowly stir in the flour, baking soda and salt until you have a soft cookie dough.
