Best Strawberry Cobbler
Description
The Best Strawberry Cobbler begins by cooking fresh strawberries with sugar, lemon juice, and zest until the berries release juices and the mixture thickens with cornstarch and water slurry. This cooking process intensifies the strawberry flavor while providing a slightly thickened, glossy filling. The lemon components add brightness that complements the sweetness of the fruit.
The topping is a biscuit-like dough made by combining flour, sugar, baking powder, and salt, cutting in cold butter to create coarse crumbs, then stirred with buttermilk to form a soft dough. Spoonfuls of this dough are dropped over the hot berry filling before baking. The topping bakes to a golden color, offering a contrast in texture and a mildly sweet, buttery flavor.
This cobbler is served warm and pairs nicely with whipped cream or ice cream, making it a comforting dessert that showcases seasonal strawberries. It is suitable for family gatherings or casual dinners where a simple fruit dessert is desired.
