Bibim Guksu

You only need a few simple ingredients to make this delicious bibim guksu recipe at home! These cold somyeon noodles are so refreshing and are coated in a sweet, spicy, and tangy sauce that takes seconds to mix together. You can be enjoying these spicy Korean cold noodles in 10 minutes or less!

Ingredients

  • 8 oz soemyeon noodles
  • 3 tablespoons Gochujang
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons minced garlic 
  • 1-2 tablespoons sugar
  • 2 tablespoons water
  • 2 tablespoons kimchi juice optional but recommended

Optional Garnishes

  • toasted sesame seeds
  • green onions
  • hard or soft boiled egg
  • cucumbers

Instructions

  1. Bring a large pot of water to a boil.
  2. Combine the gochujang, soy sauce, sesame oil, rice vinegar, minced garlic, sugar, kimchi juice, and 2 tablespoons of water in a large bowl.
  3. Once the water is ready, add the noodles to it and cook according to the package directions. Mine took 3 minutes to cook.
  4. Drain the noodles and rinse under cold water to stop the cooking process.
  5. Add the noodles to the bowl of sauce and toss to coat.
  6. Garnish with your garnishes of choice and enjoy!
