  • 2 ¼ cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup coconut oil softened
  • ¾ cup light brown sugar packed
  • cup granulated sugar
  • 2 egg large
  • 1 teaspoon vanilla extract
  • 1 ¼ cups white chocolate chips
  • ¾ cup macadamia nuts dry roasted , chopped
  • 1 cup sweetened coconut flakes

Instructions

  1. Preheat oven to 375°F. Line a baking sheet with foil and spread out coconut.
  2. Bake coconut for 7-10 minutes until toasted. Remove from oven and let cool completely. Meanwhile, make dough.
  3. In a mixing bowl, combine flour, soda, and salt. Set aside
  4. In the bowl of an electric mixer, cream coconut oil and sugars together until fluffy, about 4 minutes.
  5. Mix in the eggs one at a time until incorporated and then mix in the vanilla.
  6. Add the dry ingredients and mix until just combined.
  7. Fold in the chips, nuts, and toasted coconut until evenly dispersed.
  8. Roll dough into balls and place on a baking sheet lined with silpat mat or parchment paper. Bake for 8-10 minutes until edges are golden. Leave cookies on pan for 5 minutes before moving to a cooling rack.
