Description
Bihon Pancit (Filipino Fried Rice Noodles) is a classic stir-fried noodle dish prepared with rice stick noodles, chicken, shrimp, and a medley of vegetables. The noodles are soaked until soft, then stir-fried with garlic, onions, chicken pieces, shrimp, cabbage, and carrots. Seasoned with soy sauce, oyster sauce, fish sauce, and a touch of salt and black pepper, the dish combines a variety of savory flavors. The green onions added at the end provide freshness and color.
The texture balances tender noodles with the slightly chewy chicken and shrimp, complemented by crisp cabbage and carrot strips. The quick stir-fry method ensures the ingredients retain their distinct flavors and textures without becoming mushy or overcooked.
This pancit is ideal as a main meal served with calamansi or lime on the side to squeeze over for brightness. It works well for family dinners or gatherings when a flavorful noodle dish is desired. The inclusion of both shrimp and chicken adds protein variety and makes it satisfying.
Ingredients
- 226 g rice stick noodles
- 2 tbsp neutral cooking oil generic cooking oil
- 3 cloves garlic minced
- ½ onion sliced/finely chopped, small
- 115 g boneless and skinless chicken thigh or chicken breast cut into pieces
- 115 g Shrimp shelled and deveined
- 25 g green cabbage thinly sliced, shredded
- 56 g carrot cut into thin strips
- 2 green onion cut into 2 inch (5 cm) strips, stalks
SEASONINGS:
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- salt to taste
- 3 dashes black pepper ground
Instructions
- Begin by soaking the rice stick noodles in water for 5-10 minutes or until they become soft. Drain them in a colander and set them aside. Also, prepare the minced garlic, sliced onions, and all the vegetables.
- Heat a wok or skillet over medium-high heat. Add the oil and stir-fry the minced garlic and sliced onions until the onions become translucent.
- Add the chicken and shrimp, stir-frying until they turn white. Follow by adding the shredded cabbage and julienned carrots.
- Incorporate the soaked rice stick noodles into the wok or skillet, stirring gently with a spatula. If you have long cooking chopsticks, you can use them instead of the spatula to avoid breaking the noodles.
- Add all the ingredients for the seasonings and stir to combine everything well. Once the noodles are cooked through, which takes about 1 minute, add the chopped scallion, stir, and immediately transfer the dish to a serving plate.
- Serve the delicious stir-fried rice stick noodles with calamansi lime or regular lime. Squeeze some lime juice over the noodles just before serving to enhance the flavors.
