Binge Bars

Report
Binge Bars are a layered bar cookie combining a buttery oatmeal crust with a creamy caramel and milk chocolate topping. The crust is partially baked before adding a homemade melted caramel sauce and chocolate chips, then finished with crumbled dough for texture. These bars result in a chewy, sweet treat with rich caramel and chocolate flavors.

Description

Binge Bars consist of a buttery base made from butter, brown sugar, flour, oats, baking soda, and salt. Most of this dough is pressed into a baking pan and baked lightly to form a thin, chewy crust. A homemade caramel sauce is prepared by slowly melting caramel candies with butter and heavy cream, which is then poured warm over the crust. Milk chocolate chips are sprinkled on top of the caramel for added richness.

The remaining oatmeal dough is crumbled over the chocolate and caramel layers, adding a textured topping. The bars are baked again to set all the layers together. Once cooled, they can be cut into squares with a balance of crumbly crust, gooey caramel, and melted chocolate.

These bars work well as a dessert or snack, offering a dense, sweet bite with contrasting textures from oats and smooth chocolate. Baking the crust first ensures it sets well beneath the caramel layer without becoming soggy.

Ingredients

Servings
  • 1 cup butter softened, salted
  • 1 cup light brown sugar
  • 1 ¼ cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 bag (11 ounces) caramels unwrapped
  • 3 Tablespoons heavy cream
  • 3 Tablespoons butter salted
  • 1 ½ cups milk chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Grease a 9x13-inch baking pan with cooking spray. Set aside.
  2. Place butter, brown sugar, flour, oats, baking soda and salt in a medium size bowl. Using an electric hand mixer, beat together until combined. Press 3/4 of the cookie dough mixture evenly into the bottom of the prepared pan. (It will be a thin layer) Bake or about 15 min or until lightly browned. Do not overbake.
  3. While the crust is baking, melt the 3 Tablespoons butter, heavy cream and caramels over very low heat. Stir constantly and only keep on low heat as this can burn easily. Cook just until just melted and smooth. Pour melted caramel mixture over warm baked crust. Sprinkle milk chocolate chips evenly over caramel.
  4. Crumble remaining cookie dough evenly over chocolate and caramel. Carefully place back in oven for another 15 minutes. Remove from oven. Cool completely before cutting into bars. Serve and enjoy!
