Description
Birds Nest Cookies are made by melting together milk chocolate chips and butterscotch chips, then folding in dry Chow Mein noodles until they're thoroughly coated. The mixture is scooped into muffin liners and shaped to form a small nest with a hollowed center. Two robin's egg candies or similar small chocolates are placed in each nest to mimic eggs, and the cookies set at room temperature until firm. This no-bake cookie offers a simple way to achieve a crunchy, sweet dessert that visually resembles a birds nest, leveraging the mild saltiness and crispiness of chow mein noodles balanced by the rich coatings.
The combination of chocolate and butterscotch provides a creamy sweetness that contrasts with the crispy texture of the noodles, while the candy eggs add a colorful and playful touch. These cookies are easy to portion individually and don't require baking, allowing them to set quickly on the countertop.

Ingredients
- 2 cups chocolate chips
- 2 cups butterscotch chips
- 12 ounces Chow Mein noodles dry
- candies like Whoppers or Cadbury Mini Egg Candies, Robin's egg
Instructions
- Prepare a muffin pan with cupcake liners (or use a silicone muffin pan.) Set aside.
- Place the milk chocolate chips and butterscotch chips into a large microwavable bowl. Microwave for 30 seconds and stir. Continue to microwave in 30-second intervals until melted. Don’t overheat.
- Gently fold in the chow mein noodles. Continue to fold until the noodles are evenly coated.
- Use a cookie scoop or large spoon to portion the coated noodles into the prepared muffin pan.
- Use a spoon to create a recess in each nest. Add 2 robin’s egg candies to the recess of each nest. The cookies will quick set within about 15 minutes. They will be fully set and dry after 2 hours.
Notes
- Use cupcake liners or a silicone muffin pan to easily remove the cookies once set.
- Butterscotch chips can be substituted with peanut butter chips for a different flavor; however, butterscotch is preferred and peanut-allergy friendly.
- Chow Mein noodles are already cooked and provide a crunchy, slightly salty base; replace with broken pretzel sticks for a gluten-free version.
- Decorate nests with Whoppers Candy Eggs, Cadbury Mini Eggs, or jelly beans as alternatives.
- Store completed cookies in an airtight container on the countertop for up to four days to maintain freshness and crispness.
