Birds Nest Cookies
Description
These cookies use melted milk chocolate, butterscotch chips, and peanut butter to bind chow mein noodles into nests. The combination of sweet and creamy chocolate with the crunchy texture of the noodles creates an interesting bite. Adding three candy eggs to the center of each mound gives a decorative, playful effect reminiscent of bird nests.
The preparation involves melting chips and peanut butter slowly, then stirring in noodles to coat them evenly. The mixture is spooned onto parchment-lined sheets and refrigerated until fully set, forming self-contained nests with a balance between chewy and crisp.
Variations in chocolate types or chip flavors can adjust sweetness and depth. These cookies store well in an airtight container for up to a week, making them convenient for advance preparation or gifting.
Handling melted chocolate requires care to avoid moisture, and using a cookie scoop helps shape uniform nests without messy fingers. If candy eggs are unavailable, similar small candies can be used as substitutes.
Ingredients
- 1 cup milk chocolate chips (180g)
- ½ cup butterscotch chips (90g)
- 2 tablespoons peanut butter 40g, creamy
- 2½ cups Chow Mein noodles (150g)
- 36 candy eggs like Cadbury mini chocolate eggs
Instructions
- Line two cookie sheets with parchment paper.
- In a large microwave-safe bowl, combine the chocolate chips, butterscotch chips, and peanut butter. Microwave in 30-seconds intervals, stirring between each interval, until the chips are melted and the mixture is combined and smooth. Alternatively, melt the mixture together in a pot over low heat.
- Stir in the chow mein noodles. Scoop into 12 mounds (about 2 tablespoons each) on parchment paper. Place 3 candy eggs in the center of each mound.
- Let stand until fully set, about 3 hours. Store any leftovers in an airtight container for up to 1 week.
Notes
- You can swap butterscotch chips for other chocolate chips or peanut butter chips depending on flavor preference.
- Use a clean, dry bowl for melting chocolate and peanut butter to avoid seizing.
- A cookie scoop helps form even nests and keeps hands cleaner when shaping.
- Mini chocolate eggs can be replaced by jelly beans, M&Ms, or similar small candies.
- If chow mein noodles aren't available, chopped pretzels make a crunchy alternative.
