The BEST chocolate brownies in the world! These brownies have chewy edges and a fudge centre. Serve with a cup of tea or with a scoop of ice cream, these brownies are perfect for any occasion.

Ingredients

  • 1 tick butter salted
  • 1 ½ cup dark chocolate or chips, melts
  • 1 ⅓ cup all-purpose flour plain flour
  • ¼ cup cocoa powder unsweetened
  • ½ teaspoon baking powder
  • ¾ teaspoon salt
  • 1 ½ cups granulated sugar
  • 3 egg

Instructions

  1. Pre-heat oven to 175ºC/Gas Mark4.
  2. Line a 20x12x5 (cm) baking tin with cooking paper.
  3. Chop the butter into small pieces and tip into a glass/metal bowl. (you can use plastic if you are sure it can take heat)1 stick / 115 g salted butter
  4. Add the chocolate melts to the bowl and place it over a pan of boiling water. Ensure the bowl isn't touching the water and be careful not to get any water into your chocolate mix.1 ½ cup / 225 g dark chocolate melts
  5. Melt the chocolate and butter together, stirring occasionally.
  6. You can melt these together in the microwave, but be careful not to burn the chocolate.
  7. Measure out the flour, cocoa powder, baking powder and salt. Stir gently to combine and break up any lumps of cocoa.1 ⅓ cup / 165 g all purpose flour¼ cup / 30 g unsweetened cocoa powder½ tsp / 0.5 teaspoon baking powder¾ tsp / 0.75 teaspoon salt
  8. Once the chocolate has melted add the sugar to the chocolate in two equal(ish) batches. Ensure you stir the chocolate mixture well between the additions.1 ½ cups / 300 g granulated sugar
  9. Crack the eggs in one at a time, stirring between each egg until completely smooth.3 eggs
  10. Pour the chocolate mixture into the dry ingredients and fold together until just combined.
  11. Pour the batter into your prepared tin and smooth over the top.
  12. Bake for 45-50 minutes. The inside should still be gooey, down try the skewer test, the point of a brownie isn't a clean skewer.
  13. Allow to brownie to cool for 30 mins in the pan.
  14. Cut into bite sized pieces and sprinkle with icing sugar to serve.
  15. Alternatively cut into greedy large pieces ;-)
