Description
This ice cream combines softly whipped heavy cream with vanilla extract folded into sweetened condensed milk mixed with melted butter and Funfetti cake mix. The batter is gently folded to maintain lightness. Rainbow sprinkles are folded throughout for added texture and color.
The mixture is spread into a loaf pan and frozen for at least four hours until firm. The result is a creamy ice cream with a subtle cake flavor and bursts of crunchy sprinkles. It requires no ice cream machine, simplifying preparation.
The frozen treat can be stored covered in the freezer for up to one month. It can be scooped and served like traditional ice cream, perfect for celebrations or as a fun dessert.
Chilling the mixing bowl and beaters before whipping helps achieve soft peaks faster. Using a stand mixer or handheld mixer makes whipping the cream easier.
Ingredients
- 2 cups heavy whipping cream chilled
- 14 oz. sweetened condensed milk
- 2 tsp vanilla extract
- 2 Tbsp butter melted
- 1 cup Funfetti Cake Mix
- 1/2 cup Sprinkles rainbow jimmie
Instructions
- With a stand up mixer or hand held mixer, beat together the heavy whipping cream and vanilla extract until the cream is whipped and can form soft peaks.
- In a separate bowl, stir together the sweetened condensed milk, butter and Funfetti cake mix.
- Then gently fold in the whipped cream into the sweetened condensed milk mixture. Then fold in the rainbow sprinkles.
- Spread the mixture into a loaf pan and freeze for at least 4 hours until firm.
- Serve and enjoy! The ice cream will keep covered in the freezer for up to 1 month.
