Bisi bele bhath in instant pot
Description
This version of Bisi Bele Bhath uses the Instant Pot to combine soaked rice and lentils with assorted vegetables and spices, creating a thick, comforting dish. The spice blend is roasted and ground fresh for aromatic depth, and tamarind paste adds a subtle tartness balancing the earthiness of turmeric and mustard seeds.
The vegetables provide texture and nutritional variety, while optional chicken drumsticks add protein and richness. Pressure cooking melds the flavors quickly and evenly, resulting in a cohesive, slightly porridge-like consistency typical of Bisi Bele Bhath.
Finished with a garnish of chopped cilantro and accompanied by tangy pickle and roasted papad, this dish offers a complete and satisfying meal with layers of spice and tang.
