Bistec Encebollado (Steak with Onions)

Bistec Encebollado is a simple dish of thinly sliced breakfast steak cooked with onions, garlic, and spices including ancho chile powder. The onions are seared first to deepen their sweetness and add smokiness. The steak cooks quickly in the same pan, seasoned to taste, and is combined again with the onions for a tender and flavorful meat dish that highlights the balance between savory steak and softened, sweet onions.

Description

This recipe starts with slicing thin breakfast steak into strips or cubes, allowing quick cooking and easy seasoning. Vegetable oil heats in a skillet over medium-high heat to sear onions in a single layer, developing their natural sugars and smoky undertones before setting them aside. The steak is then cooked in the same pan with salt, pepper, and ancho chile powder, which imparts a mild smoky heat. Garlic cloves are added midway for aromatic depth. When the steak is partially cooked and tender, the onions return to the pan to meld flavors during a final few minutes of cooking. The result is a dish combining juicy, spiced steak with richly caramelized onions.

Bistec Encebollado is best served immediately while warm, allowing the tender steak and softened onions to shine. It can be a satisfying main served with rice or beans or used as a taco filling. Choosing good-quality breakfast steak and avoiding overcrowding the pan helps achieve the ideal sear and tenderness. Attention to cooking times prevents overcooking the steak, maintaining a pleasing texture.

Ingredients

Servings
  • 1 pound breakfast steak thin
  • 1 tablespoon vegetable oil
  • 1 large white onion sliced, or yellow onion
  • salt to taste
  • black pepper to taste
  • ½ teaspoon ancho chile powder
  • 2 garlic minced, cloves

Instructions

  1. Prepare the steak by cutting it into small strips or cubes. Set aside.
  2. Add the oil in a large skillet over medium-high heat. Add onions in a single layer, move around to spread the oil and then let sit for a minute. Transfer the onions to a plate and set aside.
  3. Note: Searing the onions first gives a lovely balanced of sweetness and smokiness to the onions.
  4. To the same skillet, add the bistec strips and season with the salt, pepper and ancho chile. Cook for about 3-4 minutes stirring once in a while to cook evenly.
  5. When the steak is half way cooked, add the garlic and mix to incorporate into the steak.
  6. Add the onions back in, mix and cook for another 5 minutes or until the steak is nice and tender.
  7. Serve immediately while warm.

Notes

  • Use good quality breakfast steak for optimal flavor and tenderness.
  • Cook steak in a single layer without overcrowding the skillet to ensure even searing.
  • Remove the steak from heat once it becomes tender to avoid overcooking.
