Bitoque

Bitoque is a traditional Portuguese dish, which consists of a lean fried or grilled steak or pork, that is usually accompanied by fries, rice, various salads and topped with an egg.

Ingredients

Servings

For the meat

  • 4 beef steak or pork
  • 1 tablespoon red bell pepper paste fresh red bell pepper paste, massa de pimentão
  • salt
  • black pepper
  • 4 tablespoons olive oil
  • 1 tablespoon butter
  • ½ cup white wine dry

For the rice

  • 1 onion , finely chopped
  • 2 cloves garlic , finely chopped
  • 1 tablespoon olive oil
  • 2 cups rice
  • 5 cups water boiling
  • ½ teaspoon black pepper
  • salt

For the French fries

  • 8 medium potato
  • vegetable oil

For the eggs

  • 4 egg
  • olive oil
  • salt
  • black pepper

For the salad

  • 5 large lettuce washed, leaves
  • 3 tomato diced
  • 1 red onion , sliced
  • 2 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • black olives
  • salt
  • black pepper

Instructions

French fries

  1. Peel the potatoes and wash them, then cut them into thin or thick sticks (according to taste).
  2. Wash them again and dry them thoroughly in a clean cloth.
  3. In a large saucepan or a fryer, heat a large volume of oil to 300F/150C.
  4. Fry the potatoes the first time for 7 to 8 minutes. Do not overload the pan or deep fryer. For 2 lb (1kg) of potatoes, fry about ⅓ of the French fries at a time.
  5. Let the French fries cool, while preparing the meat and/or the rest of the recipe.
  6. Fry the French fries a second time in oil heated at 375F/190C for about 3 minutes (they must be crisp and not hard). Season with salt.

Rice

  1. In a Dutch oven, sauté the onion and garlic in olive oil for 3 minutes over medium heat.
  2. Add the rice and black pepper. Mix well and sauté for a couple minutes, stirring occasionally.
  3. Add the boiling water and season with salt.
  4. Cover and cook on low heat for about 15 minutes, or until rice has absorbed all the liquid.

Salad

  1. Cut the lettuce leaves into pieces.
  2. Mix the salad and all the other ingredients.
  3. Season with salt and pepper and mix well.

Steaks

  1. Season the steaks with salt, pepper and massa de pimento. Marinate for 30 minutes.
  2. In a large skillet, heat the oil over medium heat.
  3. Brown the steaks in olive oil, turning occasionally until meat is cooked.
  4. Add the butter and pour the white wine. Reduce the sauce and keep warm.

Eggs (while cooking the steaks)

  1. Heat a little olive oil in a skillet over medium-high heat.
  2. Break the eggs in the hot oil. Cook until desired doneness. Season with salt and pepper.

Assembly

  1. Place a steak in each dish and top each steak with an egg.
  2. Garnish each dish with a little rice, French fries and salad.
  3. Serve immediately.

Notes

  • Fry the French fries for the second time during the preparation of the meat and eggs so that everything is hot when serving.
