Black Bean Cheese Taquitos

Black Bean Cheese Taquitos are baked rolled corn tortillas filled with a seasoned mixture of black beans, red bell pepper, corn, cilantro, and cheese. The filling is flavored with lime juice, chili powder, cumin, and other spices, giving the taquitos a mildly smoky and tangy profile. Heating the tortillas wrapped in damp towels before rolling prevents cracking. After rolling with cheese inside, the taquitos are baked to achieve crisp edges and melted filling, then topped with fresh ingredients like lettuce, guacamole, and salsa for layered texture and flavor.

Description

These Black Bean Cheese Taquitos feature a filling of rinsed black beans combined with chopped red bell pepper, corn, cilantro, green onion, lime juice, and spices including chili powder, cumin, garlic powder, and paprika. The mixture is seasoned with salt and pepper for balance. Corn tortillas are softened by microwaving between damp paper towels so they can be rolled easily without cracking.

The filling is placed in each tortilla along with shredded cheddar or pepper jack cheese, then rolled tightly and placed seam side down on a baking sheet. Once sprayed with cooking spray, they bake until the tortillas are crispy and the cheese inside melts. Baking ensures a crunchy exterior while holding the tender, flavorful filling inside.

These taquitos are served with a variety of fresh toppings such as lettuce, green onion, Pico de Gallo, guacamole, sour cream or Greek yogurt, shredded cheese, queso fresco, and salsa, adding freshness, creaminess, and acidity. They work well as an appetizer, snack, or part of a main meal offering a blend of crispy texture and cheesy, spiced beans.

Instructions

  1. Preheat the oven to 425 degrees F. Spray a large baking sheet with nonstick cooking spray and set aside.
  2. In a medium bowl, combine the black beans, red pepper, corn, cilantro, green onion, lime juice, chili powder, cumin, garlic powder, paprika, salt, and pepper.
  3. To help the tortillas roll better and not crack, get two paper towels damp and place two tortillas at a time in between the paper towels. Place in the microwave for 20-30 seconds. Remove from the microwave and roll up the taquitos. If your corn tortillas are super fresh, you might be able to skip this step.
  4. Place a heaping tablespoon of the black bean mixture in the center of the tortilla and sprinkle shredded cheese over the top. Roll the tortilla up tightly. Place the taquito, seam side down on the prepared baking sheet. Continue rolling taquitos until the tortillas and filling are gone. You should have about 20 taquitos.
  5. Spray the taquitos generously with nonstick cooking spray. Bake for 17-23 minutes or until taquitos are golden brown and crispy. Remove from the oven and serve warm with desired toppings.
