  • 2 medium garlic minced, cloves
  • 1 small green bell pepper seeded and finely diced
  • ¾ crushed tomatoes in their juices, 15-ounce can
  • 2 black beans in their juices (don't drain, 15-ounce can
  • 4 ounces diced green chilies canned
  • 1 teaspoon cumin ground
  • teaspoon cayenne pepper
  • ½ teaspoon chili powder

Instructions

  1. Heat the water in a large pot. Add chopped onion, garlic, and bell pepper. Sauté over high heat, stirring often, for about 5 minutes or until onion is translucent. Add water as needed.
  2. Add crushed tomatoes in their juices, beans and their liquid, chilies, and spices, and stir to combine. Simmer, stirring occasionally, for about 15 minutes, or until flavors are blended.

Notes

  • Blend part of the chili for a smoother texture if preferred.
  • Add vegetable broth to thin the chili if it becomes too thick when simmered.
