Black Bean Quinoa Salad
Description
Cooked quinoa is cooled and mixed with diced Roma tomatoes, avocado, rinsed black beans, drained corn kernels, diced red bell pepper, green onion, jalapeño, and chopped fresh cilantro. A dressing made from vegetable oil, fresh lime juice, granulated sugar, cumin, garlic powder, red wine vinegar, salt, and black pepper is whisked together and poured over the salad to coat evenly. The salad is refrigerated before serving to allow the flavors to meld.

Ingredients
- 1 cup quinoa
- 2 cups water or broth
- 2 Roma tomato diced
- 1 avocado diced
- 15 ounces black beans 1 can, rinsed and drained, canned
- 12 ounces corn kernels 1 can, drained
- 1 red bell pepper diced
- ¼ cup green onion diced
- 1 jalapeño seeded and diced
- ⅓ cup cilantro chopped, fresh
Dressing
- ¼ cup vegetable oil
- 1 ½ tablespoon lime juice fresh
- 1 teaspoon granulated sugar
- 1 teaspoon cumin
- ¼ teaspoon garlic powder
- ½ tablespoon red wine vinegar
- ⅛ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Cook quinoa according to package directions and allow to cool.
- Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and cilantro in a large bowl.
- In a small bowl, combine all dressing ingredients and mix well. Pour over quinoa salad and toss to coat.
- Refrigerate until ready to serve.
