  • 12 ounces corn kernels 1 can, drained
  • 1 red bell pepper diced
  • ¼ cup green onion diced
  • 1 jalapeño seeded and diced
  • cup cilantro chopped, fresh

Dressing

  • ¼ cup vegetable oil
  • 1 ½ tablespoon lime juice fresh
  • 1 teaspoon granulated sugar
  • 1 teaspoon cumin
  • ¼ teaspoon garlic powder
  • ½ tablespoon red wine vinegar
  • teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook quinoa according to package directions and allow to cool.
  2. Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and cilantro in a large bowl.
  3. In a small bowl, combine all dressing ingredients and mix well. Pour over quinoa salad and toss to coat.
  4. Refrigerate until ready to serve.
