Blackberry Cobbler

Blackberry Cobbler presents a warm baked dessert featuring a sweet batter poured over melted butter and topped with fresh or frozen blackberries. The cobbler is sprinkled with sugar and cinnamon before baking until the crust is golden with a slightly crisp top. Its combination of sweet, juicy berries and tender, cake-like batter yields a comforting texture. It is often served warm and pairs well with vanilla ice cream, making it a cozy treat for dessert or a special snack.

Description

This recipe begins by melting butter in the baking dish while the oven preheats. Separately, dry ingredients including flour, sugar, baking powder, and salt are combined with milk to make a smooth batter. The batter is poured over the melted butter, then blackberries are scattered on top. A final dusting of sugar and cinnamon finishes the topping before baking at 350°F for about 40 minutes. The result is a golden, slightly crisp crust with soft cake beneath and juicy berry pockets.

The juxtaposition of crispy edges, tender crumb, and bursting blackberries creates a textured dessert with sweet and mildly tart notes. Sprinkling reserved sugar and cinnamon on top adds subtle spice and extra sweetness after baking.

Blackberry Cobbler can be served warm alone or topped with vanilla ice cream to add creamy contrast. It's suitable for casual gatherings or a comforting homemade dessert.

Leftovers keep well refrigerated for a few days and may be reheated in the microwave or oven. Freezing the baked cobbler is possible for up to three months; reheat after thawing for fresh enjoyment. Variations include substituting raspberries or combining peaches and blackberries for different fruit profiles.

Ingredients

Servings
  • 3-4 blackberries fresh or frozen, heaping cups
  • ½ cup butter
  • 1 ½ cup all-purpose flour
  • 1 cup granulated sugar , divided
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cup milk
  • ground cinnamon
  • vanilla ice cream , for serving, optional

Instructions

  1. Preheat oven to 350 degrees F. Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.
  2. In a large bowl mix together the flour, sugar (1 cup minus 1 tablespoons of sugar - reserve the tablespoon for sprinkling on top at the end), baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.
  3. Drop blackberries on top. Sprinkle reserved 1 tablespoons of sugar on top, and then a little sprinkle of cinnamon.
  4. Bake at 350 degrees for about 40 minutes or until golden and slightly crisp on top. Serve warm, with a scoop of ice cream, if desired.

Notes

  • Use fresh or frozen blackberries depending on availability for similar results.
  • Store leftover cobbler covered in the refrigerator for up to 4-5 days to maintain freshness.
  • You can freeze the baked cobbler for up to 3 months and thaw overnight before reheating.
  • Reheat in the oven at 350°F for about 20 minutes until warmed through, covering with foil if browning excessively.
  • For variety, swap in raspberries or combine different fruits like peaches with blackberries to change the flavor.
