Blackberry Cobbler Recipe
Description
Blackberry Cobbler Recipe combines juicy blackberries with a sweet, buttery topping that bakes to a golden crust. The filling starts with blackberries evenly coated in sugar and vanilla extract, which allows the berries to release their juices during baking. The topping contains melted unsalted butter, sugar, eggs, flour, baking powder, and a pinch of salt, mixed just until combined and spread over the fruit.
During baking, the cobbler develops a bubbly, vibrant fruit base beneath a tender, risen crust. The texture contrasts the soft, juicy blackberry filling with the slightly crisp and cake-like topping. This dessert is traditionally served warm, often with a scoop of vanilla ice cream to balance the tart fruit with creamy sweetness.
This recipe can be adapted by using frozen blackberries without thawing, making it convenient year-round. Leftovers keep well stored at room temperature for up to three days. For longer storage, the baked cobbler freezes nicely when wrapped well and can be reheated until hot and bubbly, preserving its flavor and texture.
Ingredients
Filling
- 5 cups blackberry fresh
- 1/2 cup granulated sugar white
- 1 tsp vanilla extract
Topping
- 1/2 cup unsalted butter melted, 1 stick
- 1 cup granulated sugar white
- 1 egg
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat oven to 350 degrees. Grease a deep dish pie plate or 13x9 inch baking dish with butter or cooking spray and set aside.
- Combine the blackberries, 1/2 cup sugar, and vanilla extract in a large bowl and mix until the berries fully absorb the sugar and are evenly coated. Pour into the prepared baking dish.
- Beat the melted butter, sugar, and egg in a medium sized bowl until combined. Add in the flour, baking powder, and salt and beat just until combined. Spread the batter evenly over the top of the blackberries, using the back of a spoon or a rubber spatula to help spread out the batter.
- Bake in the preheated oven for 40-45 minutes, until fruit is bubbly and crust is golden. Serve warm with vanilla ice cream on top. Enjoy!
Notes
- Frozen blackberries can be used directly in place of fresh berries without thawing.
- Store leftovers covered at room temperature for up to three days to maintain freshness.
- For longer storage, freeze the fully baked cobbler wrapped tightly and warm it in the oven until heated through before serving.
