Blackberry Sweet Rolls

Blackberry Sweet Rolls feature a tender biscuit dough rolled around a sweetened blackberry filling thickened slightly with cornstarch. The rolls are baked until golden and soft, then glazed with a vanilla-scented icing. The dough's fragrant spices and cold butter yield flaky layers, while frozen blackberries provide juicy, slightly tart bursts within. This makes a warming breakfast or dessert pastry.

Description

The biscuit dough combines all-purpose flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon, and cold butter, processed until crumbly, then mixed with milk and vanilla to form a soft dough. After kneading lightly, it is rolled out into a rectangle. The filling is made by tossing frozen berries with sugar and cornstarch, which thickens the juices during baking. The berry mixture is spread evenly over the dough before rolling it into a log and cutting into individual rolls.

After arranging in a greased baking dish, the rolls bake at a high temperature to develop a golden crust while keeping a tender crumb inside. Upon cooling, they are glazed with a simple icing of butter, confectioners sugar, vanilla, salt, and milk for added moisture and sweetness.

The combination of cinnamon and nutmeg in the dough complements the blackberry filling. Using frozen berries directly helps maintain the filling's vibrancy and flavor. The rolls can be served warm for a soft texture and fresh fruit taste.

They are adaptable to different baking dishes, ideally fitting 8 rolls with room to expand, ensuring even baking and shape retention.

Ingredients

Servings

For the biscuit dough

  • 2 cups all-purpose flour
  • 2 Tbsp light brown sugar
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1/2 cup butter cold, cut into pieces, unsalted
  • 2/3 cup milk or buttermilk
  • 1 tsp vanilla extract

For the filling

  • 1/4 cup granulated sugar
  • 3/4 tsp cornstarch
  • 2 1/2 cups blackberries or other small berries, frozen

For the glaze

  • 1 Tbsp unsalted butter melted
  • 1 1/2 cups confectioners sugar
  • 1/2 tsp vanilla extract
  • 1 pinch salt
  • 1/4 cup milk or cream, to thin the consistency

Instructions

  1. Preheat oven to 400°F and lightly butter an 11 inch oval baking dish (see notes for alternatives). You want something that will fit the 8 rolls comfortably with a little room between them to expand.
  2. To make the biscuit dough, place the flour, brown sugar, baking powder, baking soda, salt, nutmeg, and cinnamon in the bowl of a food processor. Pulse a few times to mix the ingredients together.
  3. Add the cold butter to the food processor, and pulse until the mixture is coarse and crumbly. A few pea-size pieces of butter remaining are fine.
  4. Add the vanilla extract to the milk, and drizzle it through the top of the food processor while pulsing until the dough comes together into a single mass.
  5. Remove the dough to a lightly floured surface and knead it just about 10-12 times until it's smooth and not so sticky.
  6. Roll the dough out into a single rectangle about 18 inches long and 12 inches wide.
  7. While your berries are still frozen, quickly toss them with the sugar and the cornstarch to coat evenly. Sprinkle this mixture over the rolled out biscuit dough.
  8. Gently roll the dough from the long edge into a long tube.
  9. Using a clean piece of dental floss (this works best), or a sharp knife, cut the log into 8 equal size rolls.
  10. Carefully move the rolls to your prepared baking dish, spreading them out evenly. They will likely be delicate, so move them gently. If any berries fall out, just tuck them back into the rolls.
  11. Turn the oven temperature down to 375F, and bake for about 35-40 minutes until puffed, golden, and the juices of the blackberries are starting to bubble.
  12. Meanwhile, whisk together the glaze ingredients until smooth.
  13. When the rolls come out of the oven, allow them to cool briefly, and then spread the glaze over them while they are still warm.

Notes

  • You can bake these rolls in any dish that fits eight rolls comfortably, leaving about half an inch between them for expansion.
