Description

Blackened Ahi Tuna is prepared by slicing fresh ahi tuna into half-inch steaks and patting them dry. The fish is coated with a mixture of melted butter and a Cajun blackening seasoning that combines paprika, cayenne pepper, salt, and several herbs and warm spices such as ginger and clove. The coated steaks are pressed to help the spice mixture adhere evenly.

The steaks are then seared on a preheated smoking-hot skillet for seconds on each side, forming a crisp, dark crust. Short cooking times (10 seconds per side for rare or up to 30 seconds for more done) ensure the interior remains tender and moist with a bright pink center. This method highlights the contrast between the strong seasoning crust and the delicate tuna inside.

  • 1 lb ahi tuna fresh
  • 1/4 cup butter melted

Cajun Blackening Seasoning

  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/4 tsp ground ginger
  • 1/4 tsp black pepper
  • 1/4 tsp oregano
  • 1/4 tsp fennel seeds
  • 1/8 tsp ground clove

Instructions

  1. Rinse the fish and pat dry with paper towels. Slice into 1/2 inch steaks.
  2. In a small bowl mix together the spices and set aside.
  3. Place a frying pan or cast iron skillet over high heat until it starts to smoke. Keep kitchen area well ventilated.
  4. Toss the ahi tuna in melted butter and then coat with spice mixture on both sides. Press spice mixture to adhere. Immediately sear on high heat each side for 10 seconds for pink in the middle, or for no more then 30 seconds per side to cook through well. Serve immediately.
