Blackened Chicken
Description
The recipe calls for chicken breasts halved horizontally or boneless, skinless thighs coated evenly with a homemade blackened seasoning mix containing paprika, smoked paprika, cumin, brown sugar, garlic powder, onion powder, oregano, and optional cayenne pepper. The chicken is rubbed with the spice blend, then cooked in hot olive oil in a skillet over medium heat. This technique creates a deeply colored crust that enhances flavor while sealing in moisture.
The resulting chicken features a balance of smoky, savory, and slightly sweet notes with a tender texture inside. It can be served as a main entrée or sliced for salads and sandwiches. Cooking to an internal temperature of 165°F ensures safety and optimal juiciness.
For alternative cooking, the chicken can be oven-baked with the seasoning at 425°F for 17 to 20 minutes. Leftovers store well refrigerated for up to four days.
